I am the worst about wrangling kids and working all day and then realizing that it’s almost dinner time and I have absolutely nothing ready. A girl can only handle so many blank stares from family when I have nothing for dinner to eat. This chili recipe is my EASY EASY quick go to with items you can keep on hand in the pantry, and it is SO good and healthy with our lean home grown grass fed ground beef.
WHAT YOU NEED:
- 2 lbs 410 Farms Grass Fed Ground Beef BUY IT HERE!
- A couple tablespoons of olive oil
- Clove of garlic (personally I use the minced garlic in a jar – keep it easy, remember!?)
- One yellow onion
- Two cans of petite diced tomatoes with garlic and olive oil
- One package of Wick Fowlers 2 Alarm Chili Kit (again – easy…with this I don’t have to use any measuring spoons at all!)
- A cast iron dutch oven if you have one
- Sea salt to taste
WHAT TO DO:
- Heat your dutch oven (or regular pan if you don’t have one)
- Dice and brown your onion with a little olive oil and add garlic to preference, I like
- Add your 410 Farms Ground Beef and brown. Drain fat and return to the burner.
- Add the two cans of diced tomatoes.
- Follow the directions on the chili kit, adding all the spices except the red pepper and masa. (Spices are easy if you don’t have or can’t find the kit – chili powder, paprika, onion powder, garlic powder, cumin, oregano.)
- Mix it up, let it simmer with the lid on, stirring occasionally.
- Add salt to taste if needed. Then add a little red pepper at a time until you get it to the heat level you’re looking for.
- If it’s a little too thin for your liking, add the masa to a tiny bit of warm water and add that into the chili, let it simmer for 10 min to thicken.
AND YOU’RE DONE! It’s THAT easy. Told you! It’s the perfect “oh shoot I forgot dinner” – thaw a pack of ground beef quickly, add you spices and let it simmer. It’s SO good, I actually have some in the fridge from yesterday – hence my inspiration to get it on the blog for you.
Grass fed beef is more lean than standard ground hamburger meat that you’d buy at the grocery store. Our blend is more of a 90/10, you’ll be pleasantly surprised at how little fat there is to drain off the ground meat as you cook. It’s a great healthy option for your family!
