ABOUT OUR FAJITA MEAT | SKIRT STEAK

Our fajita meat comes from our skirt steak cuts. Skirt steak comes from the underside diaphragm, and is the perfect "oh shoot I still need to make dinner" cut, as it only needs 3-5 minutes per side. But don't let the quick cook time fool you. Even though the cut cooks quickly, it's still amazingly rich in flavor and works great as a steak or you can slice it against the grain and toss it on salad or street taco. 

Our 14 day dry aging process deepens the flavor even more on this large grained cut, and you won't be disappointed you have it on hand for those last minute meals. Definitely beats a ham sandwich.
